vegan mofo day 3: i kind of suck

You guys, I'm not going to show pictures of what I made for dinner last night.  I have a few of reasons.  

1. it wasn't photogenic

2. i really needed to go grocery shopping

3. therefore, it was rather random

4. except that it was yet ANOTHER curry

5. and it wasn't all that great, though it was fine...just not...great.

So.  Michael might kill me in my sleep if I make another curry anytime soon.  Really, though it was either going to be curry or mexican food last night and we didn't have salsa, the makings for queso, any tvp, fresh lettuce, or refried beans.  Well, I guess it wasn't going to be mexican after all.  What happened was that I worked on editing photos on my computer for 3 hours (the pictures from Michael's sister's wedding) and by the time I was done, I had 1 hour to make dinner, dishes were still dirty, and there just wasn't that much in the house to cook.  Which is when I start making curry.  It was pumpkin (pureed from a can), kale, split peas, carrots, onions, and coconut milk..and I put SOBA NOODLES in it.  Why?  I have no idea.  I didn't feel like cooking rice, I guess.

Do you ever have a day like this?  Well, I've decided I'm not going to post any more crappy food for Vegan Mofo because I'm not going to make any more crappy food.  I just got back from the grocery store, armed with fresh produce and lots of fixins for stuff I haven't made before.  I'm forcing myself out of my slump.

Tonight I'm making (all from scratch) sausages, peppers & onions in a tomato sauce, and buns to put it all in.  Michael's wanted this for a few days now and I feel bad enough after I saw his disappointment that I had made curry (again) that I'm going to commit to making it.

But I still have an assload of dishes to do.  Even more than yesterday, since none of them got done at all.

Bummer.  But it's time to stop procrastinating and get myself into the kitchen and make it happen.

Oh, by the way, I'm going home this weekend to care for my grandma and I will be making something vegan for her to eat!  woo!  I got a new cookbook at a booksale today (I'll post about it tomorrow) and I think there's something in there that she'll like.  I'm excited!

Seriously though: better post tomorrow, I promise.  It just got a little hectic this week.

sorry about the curry! i know how it is. sausage, peppers, and onions sounds so good; ironically, i have mentioned this meal to my husband for a few days now so i think it is in my future if i find the time to make the sausages.

sadface on the curry not being as tasty as you had wanted it to be. but a lot of curries taste super awesome the next day - so don't be surprised if it rocks then, ya know?! but i've had days like that before - and on crap days i tend to make some sadfaced foods - but you can always doctor them up later! and that's awesome that you have fresh produce and fix'ns for more yumminess! hooray for making delicious vegan yummies for your grandma, too! that = most awesome!

(i just realized i say awesome a lot! ahahahahahahahahaa! sorry!)

don't worry about it, your post was still interesting. I guess it's nice to know (not that it makes it fun) that I'm not alone in making a passable, but not super exciting meal once in a while.
