Joe the Plumber, will you come fix my Leeky Potato Soup?

i'm hilarious!

Just kidding, it was perfect as it was.  No really, I'll post the recipe for that in a minute and tell you what it was all about, but...  did you watch the debate on Wednesday?  That was just ridiculous.  John McCain was just acting like an arrogant, impatient child that was just squirming and smirking and making an ass of himself in general.  All the eye rolling!  And at the end, how he threw his hands up!  Hello!?  Can you not conduct yourself like an adult, you DOUCHE?  I guess not.  Which is one of many many many reasons why I will not be voting for him.  Obama rules.   He's smart, he's ethical, he's eloquent (yeah, that's right, John, he's eloquent, what about it?), and hopefully he'll turn this country around so we can stop being a shithole that the rest of the world despises.

Ah.  endrant.

Something else though, I meant to post yesterday, is a link to some blogposts by LindyLoo from Yeah, that 'Vegan Shit'.  She has a way with words and did some truly goosebump worthy posts from 2006 that are linked in that post.  I beg you to please read at least the first 2 links there, under 'why'.  These are things that I think that I don't have the words for, and she stepped up and said them.  Please, stop over there and read it.  I promise, you won't regret it.
(I just realized my first linkage didn't work, so here's the first one and here's the second one...sorry about that!)

Ok, so back to my soup.  This soup was like a potato soup gone wild.  I screwed it up a tiny bit, but I'll post the recipe like it should have been if I hadn't screwed it up.  All I did was forget to do something and then did it later.  So it's not that messed up.  Think:  potato soup + chunky veggies and herbs.  Smooth, delicious, warm, comforting....  Oh yeah.  

Leeky Potato Soup w/ Veggies

4 potatoes (big ones, but not those giant bakers you see sometimes)
2 leeks, sliced thinly
2 scallions, sliced thinly
1 medium onion, diced
3 carrots, sliced
1 cup frozen sweet corn
4-5 cloves garlic, minced
4 Tbsp vegan butter
2 Tbsp flour
5 cups plain soymilk
2 cups water
2 veggie bouillon cubes
2 Tbsp fresh thyme
2 Tbsp fresh parsley, chopped
2 bay leaves
salt and pepper to taste

So.  First off, cube and cover your potatoes with water, bring to a boil and let it go for 20 minutes.  Drain and mash them, put em back in the pot.  

While the potatoes are cooking, cut up your other veggies (besides corn) and saute until the onions and leeks are soft in a big skillet (you'll need a little oil here), set them aside.  

Back to the potatoes.  Add the soymilk, water, and bouillon; turn heat to high.  In a small saucepan or skillet, melt the butter and stir in the flour, stirring constantly until slightly browned (you're making a roux here).  Add this to the potato mixture, and stir until the liquid thickens slightly (it won't get super thick, but it will get thicker).  Add the veggies (including corn) and herbs to the pot, and simmer for about 45 minutes.  When the carrots are nice and soft and it all smells lovely and herby, you win:  it's done!  Add salt and pepper to taste at this point, or in your bowl after serving.  (if you get the bay leaves in your bowl, don't eat em!)

We garnished ours with sliced scallions and bac'n bits.  It was also awesome today for lunch with a handful of nutritional yeast stirred in!

So, no, Joe the Plumber, I don't need your help.  I can survive with my leeky soup in my incredibly low tax bracket just fine.  Just do me a favor and stop complaining about making over $250,000 a year.  Cry me a friggin' river, you rich fuck.

Bloody Joe - he was all over our news - and I am in Australia!!! We get so much about the election (for crying out loud it feels like we just went through the whole ordeal when we got rid of Howard last year). I had to think how it permeates you lives over there at the moment.

The soup looks awesome - I wish that it was still soup weather - I can never have too much soup.

I'm with Tina Fey - if McCain wins, I'm leaving Earth. Seriously, DOUCHE is the only word that describes him. We were listening on the radio, so missed a lot of his insanity live, but I caught up on the internets - hilarious and mind-boggling!

But back to soup - it looks sooo good! And makes me start thinking of kicking my leeky potato soup up a notch next time, because yours is super fancy compared to mine!

I agree with you about the debate, although I admit I was a little bit biased. Did you tune in last night to see Sarah Palin on SNL? She hardly did anything. How boring. She really scares me.
Anyway, that soup looks so delicious and creamy and healthy to boot. I may have to whip up a pot sometime soon.

So very apt! I had to turn off the telly on Friday I was that sick of hearing the name 'Joe the Plumber', and I'm in the U.K.

I think Obama is awesome though, unlike Gordon Brown who is about as charismatic as a poo!

i am right there with you - mccain was acting ridiculously immature. he was just making an ass of himself and i'm kinda glad he did - 'cause now maybe some people will see what a jerk he really is! ohhhh, Obama = eloquent, indeed! i couldn't agree more. he makes me smile - i super puffy heart him! hoooray!

your leeky potato soup looks freak'n glorious, Jessica! seriously. just gloroius! we just had some mac 'n cheeze for dinner and now i want to shoot myself in the foot for not seeing your post sooner - we could have had leeky potato soup instead!mmmmmmmmmmmmmmm! i read LindyLoo's post the other day - they gave me goosebumps as well. even made me get all teary eyed. she really hit the nail on the head. damn.

alrighty - i'm going to grab a giant glass of wine and then see what other deliciousnesses you've been crank'n out! wahoooooooooo - sunday NIGHT! :D
